Westhaven Cake

Ingredients

  • 3/4 cup chopped dates

  • 1 cup hot water

  • 1 tsp baking soda

  • 1/2 cup butter

  • 1 cup sugar

  • 2 egg yolks, beaten

  • 1 3/4 cups flour

  • 1 Tbsp cocoa

  • 2 egg whites, stiffly beaten

  • 1 cup chopped nuts

  • 1 cup chocolate chips

Directions

  1. Pour the hot water over the dates, and stir in the baking soda, set aside t ocool.
  2. Cream butter, sugar, egg yolks and vanilla.
  3. Add date mixture to the butter mixture and beat well.
  4. Now mix in the flour and cocoa, and then gently fold in the egg whites.
  5. Butter and flour a 9x13 pan.
  6. Pour batter into pan and sprinkle with chopped nuts and chocolate chips.
  7. Bake in a 350 degree oven for 30-35 minutes.
